3D modeling in either 3dsmax7 or Blender help.

I've been watching and watching and reading trying to find out how to change or even add a texture to an object in either 3dsmax7 or Blender.  Am I really missing something?
I am trying to create a more updated model of Link from OoT and Smash Bros(n64).
I got the VRML data and have just link in the center.  When you view him as solids, his tunic is green and his arms and legs are the tight white and his hands are brown from the gloves.  But I render or try to use the model with something and I get white textures all over him, alot of the textures in smash bros. were "mirrored" onto the adjacent side of like his face and shield.

I just can't seem to find the damn thing that lets you change the texture on either 3ds7 or Blender.
