                    ZFGC:

ZFGC-
Awakening of a shadow: because the demo was alot longer and more complete than most
Ring of Seals: Not much info yet but looks decent
OOT 2d: So much possibility to fail, but it might work. The team seems pretty dedicated and they all are great at what they're doing.

Hmmm..
I remember that Rod of Leehna demo (2?) was pretty much the greatest Zelda-demo I've played.
King Mob's Shadowgazer took the fangames to pretty much professional level. It had great custom graphics, story and gameplay.
And then there's of course Ocarina of Time GB, which was the only oot2d demo to contain the deku tree dungeon. And it rocked!

I just realized those are all pretty old projects, so I'll have to break the rules, and choose more than 3 games to honor the ones that are active :P.
OoT2D by the team dekunutz. Loving the progress so far!
The Legend of Zelda 3D: Flying rooster. Just wow! One of my favourites. Simple but great graphics and awesome gameplay so far. And the fact that it's actually a great 3D Zelda fangame :P

Oh, and then there was Shrines of Deceit. It had awesome graphics and design (thanks to .TakaM), but sadly they never released a decent demo.
Good old days

The shadowgazer did not fail. It became an IP instead of a fangame.

Independent Project. Thus not a game conected to a franchise, not a fangame. Everything about the new version of Shadowgazer will be property of King Mob as it is his creation. And yes he is probably still working on it. Just because you don't hear from it here it does not mean that an IP is canceled.

Three favorite projects huh?  I will list from the active projects I am aware of.  There are a lot that I like as well so it is difficult to choose, but here we go.

- OOT2D:  Okay lets face it.  This is not only the best active OOT remake, but one of the best looking zelda fan games out there.  I say "looking" only because I have not
yet had the privilege of trying a demo for it...  *nudges team dekunutz*

- Project AM2R:  Okay it isn't here on this form, but come on.  It has got to be one of the best fan games ever made on GM.

- Eh... *cough*  SSB ZFGC:  I actually really enjoy playing it...  and I hear that the guy who makes it is pretty cool too...

I forgot to mention the sage knight, I usually don't like RPGs but that one was pretty interesting.
EDIT: as linkwolf said, AM2R is really good, it looks as if it might not fail, and once it's finished it'll be great

Three faves is hard, but currently.

1. Flying Rooster - I cannot wait for the next playable demo of this game. All hail Drandula!
2. OOT2D - You can't help but smile when you see an OOT remake get this far.
3. Sage Knight - Has kind of a close place in my heart.

I'd have to say that Rod of Leehna is the best game on ZFGC by far. That's probably because we haven't gotten a demo of OOT2D :P

Fox's Lights of the Past was looking good as well; a shame it was canceled :(

The flying rooster is also one project I'm keeping my eye on like a hawk :)

It makes me sad that it's dead, but Oracle of Life was my favorite. *sheds tear*
The next two are probably Shadowgazer and OoT2D FSA, something about the Minish Cap style just swoons me. Chiming Bells is looking to be really great too. ;)
