They were probably just normal humans. Aside from Link, nobody in Ordon Village was a Hylian in Twilight Princess.

Humans are a race in Zelda.... o_O

Not sure they're ever explicitly named as such but Hylians/Hyruleans specifically have pointy ears, which not all humans in the games do.
